Ginger Miso Soup
Serves 4 to 6
Here is a great soup to take when you are down with cold and flu. It comes from Rosita Arvigo, author of "Rainforest Home Remedies."
- 1/2 head cabbage, chopped
- 1 onion, chopped
- 1 head garlic, chopped
- 3 carrots, sliced
- 3 pieces celery, diced
- 6 Tbsp ginger, grated
- 1/4 c miso (soybean paste)
- 2 quarts water
- juice of 1 lemon or lime
Simmer the vegetables in the water until tender (about thirty minutes), then add ginger and garlic and allow to boil another five minutes. Remove from heat. Take a bit of the hot soup from the pot and mix with the miso to form a thick liquid. Add to the soup and serve. Squeeze a bit of fresh lime juice into the bowl. For an added health boost, sprinkle crushed garlic on the soup before serving.
